Watermelon Gazpacho Ingredients

Here is a soup I like to make in the summer with veggies from my garden and CSA
share. This is a terriffic way to use your seasonal, organic prduce. The
watermelon and cucumber are refreshing and cooling in the summer and you can
experiment with adding in what you like and waht you have on hand.  This soup
can be refrigerated for 4 days but I doubt it will last that long!

Watermelon Gazpacho

Watermelon Gazpacho

Ingredients:


8 cups of chopped watermelon, seeds removed

1 cucumber finely diced

1/2 cup red onion finely chopped

1 bell pepper, finely diced (red, yellow or purple)

1/2 jalapeno pepper finely diced

1 small handful cilantro

1 small handful of mint

Juice of 1/2 of a lime

2 Tbs white balsamic or apple cider vinegar

1 Tbs cold pressed, organic olive oil (optional)

Directions:
Puree the watermelon together with the cilantro and mint and put into a large
bowl. Stir in the rest of the ingredients.

Vegan Spinach Salad Recipe For Breast Cancer

Spinach is one of the healthiest foods we can eat. To support a plant based diet for breast cancer prevention we offer vegan recipes once a week for Meatless Monday. We ask you to support your local organic farmer when you purchase the ingredients for this recipe. Enjoy!

Spinach Salad

INGREDIENTS

1/2 Bag Organic Baby Spinach Rinsed

2 Organic Plum Tomatoes Cut Into Wedges

1/2 Avocado Cubed

1/2 Cup Organic Broccoli Florettes

1/2 Cup Organic Cauliflower Florettes

Handful of Sliced Mushrooms

1/4 Cup Drained Mandarin Orange Sections

Tosh in Your Favorite Nut ( Walnut,Pine Nut,etc…)

DRESSING

2 Tablespoons Olive Oil

1 Tablespoon Apple Cider Vinigar

1/2 Tablespoon Frontier Organic Garlic Powder

1/2 Tablespoon Dulse Flakes

1 Teaspoon Pink Himalayan Salt

1 Teaspoon Kelp & Cheyenne Seasoning
