Protein Rich Entree – Vegan Sausage, Spinach & White Beans

This one pot wonder is perfect for a breast cancer recovery diet. Easy to make and the whole family can enjoy!  Also use organic ingredients when possible.

Ingredients:

  • 1 Package of Vegan Italian Sausage
  • 2 Cups of Vegetable Broth
  • 2 Cloves Garlic
  • 1 Tbsp Dried Oregano
  • 1 Tbsp Olive Oil
  • 1 Can Drained Cannellini Beans
  • 1 Can Diced Italian Tomatoes or 2 Diced Plum Tomatoes
  • 6 Cups Baby Spinach (1 bag)

Directions:

  1. Fry vegan spinach in Olive Oil when done add garlic and cook for 2 minutes.
  2. Add vegetable both, beans, tomatoes cook for 7 minutes.
  3. Add baby spinach, stir into mixture just until wilted.
  4. Put into and sprinkle Nutritional Yeast on top.
  5. Enjoy!

A combination of a healthful diet and physical activity seems to be particularly important, as was shown in the Women’s Healthy Eating and Living Study, which included 3,088 women previously diagnosed with breast cancer. Women who had at least five servings of fruits and vegetables each day and averaged 30 minutes of walking 6 days per week had roughly half the risk of dying from breast cancer, compared with women who ate fewer vegetables and fruits or who were less active.

So a healthful plant-based diet helps in many ways. It makes weight control easier, helps you avoid unhealthful fats, and keeps fruits and vegetables front and center. This combination, along with regular exercise, helps prevent cancer and also reduces the risk of recurrence.

Protein Rich, Sugar-Free & Vegan Hot Chocolate Recipe

This hot chocolate mix is packed with protein and is the answer to a daily high calorie, sugar-free warm chocolate comfort drink. This protein powder hot chocolate mix makes four cups. Always use organic ingredients hen possible.

Protein Powder Hot Chocolate Mix

  • 1 cup Chocolate Brown Rice Protein Powder
  • 1/2 cup Monk Fruit Sweetener or sweetener of choice
  • 1/4 Dark Cocoa Powder (sift cocoa powder)

Directions To Make 1 Cup of Hot Chocolate

  1. Add 7 tablespoons of very well mixed hot chocolate ingredients to a mug.
  2. Add 1/2 cup of boiling hot water and mix very well so no clumps remain.
  3. Add another 1/2 cup warmed nut milk, mix again and enjoy.

Sugar Free Chocolate Protein Truffle Recipe For A Cancer Diet

These protein truffles are an ideal alternative to regular high sugar and high-fat chocolate truffles. With 5g of protein per truffle and no sugar, it is a great way to consume protein for a  person who has no appetite but needs to consume proteins during cancer treatment. Always use organic ingredients when possible.

Ingredients

  • 1 1/2 scoops – Chocolate vegan protein powder (Alternative – any protein powder can be used with 2 tbsp – coco powder)
  • 2 Tbsp – Crunchy peanut butter
  • 1/4 cup – Almond milk
  • 2 Tbsp – Sweetener (agave nectar, fruit sweetened jam)
  • 10 Whole Hazelnuts
  • 2 Tbsp – Shredded coconut
  • 1/2 tsp. Himalayan Pink Salt

Directions

  1. In a bowl or food processor add the vegan protein, sweetener, salt and peanut butter and blend to make a thick mix.
  2. Add the almond milk a little at a time to make a thick dough.
  3. Take a teaspoonful of the dough at a time and flatten into a disk.
  4. Place a hazelnut in the center of the disk and roll the dough back into a ball leaving the nut in the middle.
  5. Roll the truffle ball in some shredded coconut and leave in the fridge for 10 minutes to set.

Protein Powder Ideas For Lunch & Dinner During Cancer Treatment

Here are some protein powder ideas for lunch and dinner, following on from last week ‘s suggestions for breakfast. It doesn’t just have to be a shake or smoothie.

As I discussed in Beyond Smoothie 1 – Protein powder for breakfasts, there are times when we need to use protein powder in our diets due to difficulties with eating or getting adequate nourishment during cancer treatments. But it can get monotonous and boring to just have smoothies or shakes. And sometimes we want something warming and more comforting rather than a cold drink. But there are other ways to use the powder.

Protein benefits on blood glucose levels
Remember that adding protein to a high carbohydrate meal/food can also help with blood glucose levels. For example, with the mashed potato idea shown below, the protein powder addition may well reduce glucose levels after eating it. Similarly for baked goods. Instead of just having flour and fat – add some protein. Protein powder can really help in balancing blood sugar.

So here are some suggestions on how to use powders in other ways that can be part of lunch or dinner.

Delicious & Sugar Free Protein Brownies – Recipe For A Cancer Diet

Breast cancer patients can exhibit an increased demand of protein. Tumors utilize glucose as their main source of energy supply. Thus, a diet supplying the cancer patient with sufficient protein while restricting the sugars tumors thrive on, is a helpful strategy in improving a breast cancer patients healthy recovery.

This protein rich recipe includes hemp protein powder which is not marijuana. The two plants are distant relatives, having similar physical appearances and structures but little more.  Marijuana flowers contain a chemical called THC which, when heated and ingested, causes intoxication.  Marijuana has been used for this reason as a medicine for thousands of years.

Hemp, on the other hand, contains 0.00% THC, so has no narcotic effect on people.  Hemp has never been used as a medicine; it has strictly been used primarily as a fiber plant and secondarily as a food crop.  Hemp can only be grown with a government issued permit and requires mandatory lab testing to ensure that all hemp grown contains 0.00% THC.

With this in mind we wish to share this protein rich recipe.

Ingredients:

  • 2 Small Ripe Bananas
  • 3 Tbsp Ground Flax Seed
  • 
3 Tbsp Chia Seeds
  • 2 Packets Truvia or Stevia
  • 1/2 Tsp Baking Powder
  • 
1/2 Tsp Baking Soda
  • 2 Scoops Chocolate Hemp Protein Powder
  • 
1/2 Tbsp Unsweetened Cocoa Powder
  • 1 Tsp Vanilla Extract

Directions:

  1. Peel Bananas
  2. Add bananas to a blender or food processor and blend until smooth
  3. Mix in: baking powder, baking soda, vanilla and Stevia.
  4. Mix in flax-seed
  5. Stir Chia Seeds
  6. The batter should look like poppy-seed muffin mix
  7. Add 2 scoops of chocolate hemp protein powder.
  8. To give the brownies an extra chocolate boost, stir in unsweetened cocoa powder.
  9. Pre-heat Oven to 350 degrees.
  10. Grease a baking pan (8 x 8).
  11. Spread out brownie batter evenly across the baking pan. (about 1/2 inch thick)
  12. The batter cooks how it is (does not rise) put onto the baking sheet, no rising or flattening.
  13. Bake 10-12 minutes.
  14. Cut into eight brownies.

85 Calories, 2.5 g fat, 133 mg potassium, 10.5 g Carbs, 4 g Fiber, 3 g Sugar, 6 g Protein.

Protein Rich Amaranth & Lentils Patties Recipe

Amaranth and Lentils Protein Recipe For Breast Cancer

Amaranth has the highest level of protein per serving out of all of the different grains. Amaranth can be added to other plant protein sources to create whole protein.  It also contains the cancer fighting phytochemical squalene. In studies, the antioxidant squalene has been shown to reduce or halt the blood supply to tumours, studies also indicate that the amaranth seed can inhibit the growth of breast cancer cells. The following lentils and amaranth patties recipe is healthy, easy to make, vegan and delicious! Always use organic ingredients when possible.
Ingredients
  • 1 cup red lentils
  • ½ cup amaranth
  • ½ cup chopped fresh parsley
  • 1 onion, diced
  • 2 tbsp ground flax + 3 tbsp water (or one large egg)
  • 4 tbsp nutritional yeast
  • ½ cup breadcrumbs (GF)
  • some sliced black olives (optional, but recommended)
  • salt and ground pepper, to taste
  • some oil
 Instructions
  1. Mix the ground flax and water in a small bowl and set aside for 5 minutes to thicken.
  2. Add red lentils and amaranth in a pot. Cover with water and boil for 15 minutes. Strain them.
  3. Put them in a large bowl and blend in all the other ingredients, except oil. If the composition is too moist, add more breadcrumbs. The patties should be easy to form.
  4. Heat some oil in a non-stick frying pan.
  5. Make the patties – 1 tbsp per patty.
  6. Fry them 2 minutes on each side.
  7. Put the amaranth patties on a plate covered with a paper towel, in order to absorb all excess oil.

Avocado Toast With Veggies & White Bean Salad

Veggie & White Bean Salad  on ToastBy: Breast Cancer Yoga Staff.

Try this high protein recipe that is healthy & tasty. Serve as an open-faced sandwich for a light lunch, or serve along side an immune boosting soup for a hearty dinner feast. The vibrant veggies and rich creamy avocado merge perfectly with nutty rustic white beans, and accents of citrus, white miso, cayenne and pepper. Always use organic ingredients when available.

Avocado Toast With Veggies & White Bean Salad
vegan, serves 3

1 16 oz. can white beans (cannellini) – drained, rinsed
1 small avocado, diced
1/3 cup sweet onion, diced
1 small carrot, chopped
1/2 cup spinach, thinly sliced
1 tsp apple cider vinegar
1 lemon, juiced
2 tsp white miso paste
1 Tbsp fresh tangerine or orange juice + pinch of zest
2 Tbsp nutritional yeast
1 Tbsp hemp or sunflower seeds
pinch of cayenne pepper

NOTE:

  • Topping: fresh chives
  • Served on toasted bread (organic homemade Rye Bread Recipe)
  • You can adjust the ingredients in this recipe by trying different veggies, seeds, beans and even seasonings.

Directions:

  1. Add the beans and avocado to a large mixing bowl. Mash well with a fork until thick and chunky, yet creamy like a chunky guacamole or hummus. Mash beans as desired. I like mine well mashed.
  2. Prep all your veggies and fold into the avocado mixture.
  3. Whisk the white miso paste with the citrus juices and vinegar. Fold this liquid into the mixture and continue folding until well combined and the veggies begin to soak into the creamy and liquid.
  4. Serve right away or chill in the fridge for 15-30 minutes before serving. This fresh salad is best served right away, since it slightly separates when left over night in the fridge.

Ingredient ideas:
* kale, finely chopped
* parsley or herbs, chopped
* chopped nuts
* omit the miso and just use pink Himalayan Salt
* tsp of tahini

High Protein Carrot Cake Ball Recipe For Cancer Diet

Carrot Cake Ball Recipe That is Sugar Free and VeganBy Breast Cancer Yoga Staff.

This recipe is very flexible. Use the nuts and seed you have on hand. Add less dates and oil/milk for a crumblier treat. Add more dates and oil/milk for a sweeter gooier snack. Always use organic ingredients when possible. Oil free cancer diets omit coconut oil and use coconut milk.

This recipe includes carrots which contain carotenoid antioxidants, these compounds help protect against oxidative DNA damage, a key event in the cancer process. This recipe also includes nuts which contain many helpful nutrients and healthy omega-3 fatty acids, which help your body fight inflammation. Nuts contain the antioxidants quercetin and campferol that may suppress the growth of cancers.

Ingredients

  • 3/4 cup almonds
  • 5-6 dates, pitted
  • 1/3 unsweetened shredded coconut
  • 2 Carrots, shredded
  • 1/2 Tbsp Cinnamon
  • 1/4 tsp Cloves
  • 1 Scoop Vanilla Vegan Protein
  • 2-4 Tbsp coconut milk or coconut oil, melted

Instructions

  1. Put almonds in food processor. Blend until a fine flour. Remove.
  2. Put dates and coconut in food processor and blend until a smooth paste in formed.
  3. Return nuts, add carrots, spices and vegan protein, and mix well.
  4. Add coconut milk or oil and blend until desired consistency is reached.
  5. Form into balls.
  6. Store in refrigerator.
