Vegan Cream of Cauliflower Soup For Breast Cancer

Vegan Cream of Cauliflower SoupBy Diana Ross, E-RYT 500, Founder of Breast Cancer Yoga

One of my favorite soup recipes. Easy, quick and delicious the three magic steps for a successful soup. Cauliflower has such a great subtle flavor and when you add a few magic ingredients it pops with flavors.

Ingredients:
1  large onions
1  tbsp. vegan butter
4  cups vegetable broth
1 or 1/2 cup of nut or rice milk
1 1/2 lb. of cauliflower, cut into flowerets
2  carrots, peeled and diced
6  shiitake mushroom
6  new potatoes
add: salt and  black ground pepper to taste
1/4 tsp. nutmeg (grated if possible)
1/8 to 1/4 tsp. cayenne (if you like spicy)

Directions:

  1. In medium sauce pan saute’ onions in butter until translucent (3 minutes).
  2. Boil potatoes until (almost) done.
  3. Reuse medium sauce pan and saute’ shiitake mushrooms and potatoes until brown. Put to side for garnish.
  4. Add vegetable broth, cauliflower flowerets and carrots. Bring the broth up to boil then reduce the heat, cover and simmer for 15 minutes or until veggies are soft. Remove from heat when done, cool down until warm.
  5. Transfer soup to blender or food processor, add nut or rice milk, onions and puree. I personally like it a bit lumpy. Add spices to taste. You may also add more milk if it is thick.
