Delicious & Healthy Mediterranean Roasted Chickpea Wrap

This simple and delicious Mediterranean inspired roasted chickpea wrap with refreshing tzatziki a cucumber vegan yogurt sauce comes from Susan at LiveLeanEat.com . We at Breast Cancer Yoga made this recipe and give it two thumbs up!

Ingredients
• 1 15 oz can chickpeas 425 g, 1 ½ cup soaked chickpeas if starting from dry, drained and rinsed
• 1 Tbsp olive oil 15 mL
• 1 Tbsp paprika* 7 g
• 1 tsp ground black pepper 3 g
• 1/2 tsp cayenne pepper 1.5 g
• 1/4 tsp salt 1.5 g
• 4 pita flatbread
• 1 cup tzatziki  (vegan plain yogurt & cucumber sauce)
• 1/4 red onion cut into strips
• 2 lettuce leaves roughly chopped
• 1 tomato sliced

Directions
1. Pat dry chickpeas with paper towel, removing any skins that may come off.
2. Gently toss chickpeas with oil, paprika, black pepper, cayenne pepper, and salt.
3. Spread chickpeas onto a greased rimmed baking sheet and roast at 400 degrees F (200 C) for about 20 minutes, until lightly browned but not hard.
4. Spread some tzatziki onto one side of the pita, then sprinkle in ¼ of the chickpeas and add veggies. Fold in half and enjoy!
Notes
• *If you don’t like spicy foods, half the amount paprika, black pepper, and cayenne pepper. Taste a chickpeas before baking and adjust flavors as needed.
• If your pita breads crack when you fold them, cover them with a moist paper towel and microwave for 20 to 30 seconds. Assemble your sandwich immediately after microwaveing.

Dairy-free Mini Pumpkin Pies are the perfect vegan dessert recipe for a cancer free lifestyle diet. Because it’s so easy to make, it is also a fantastic last minute dessert recipe. This recipe is so easy that you can whip it up right before dinner, and then pull it out of the refrigerator when it’s time for dessert.

Don’t forget always use organic ingredients when possible.

What you need:

For the base:

  • 1 cup almonds
  • 1/2 cup medjool dates
  • 1 spoons cocoa powder
  • 1/4 cup water

For the puree:

  • 1.5 cup pumpkin puree
  • 10 spoons maple syrup (pure)

What to do:

  1. Blend the base ingredients in a strong blender. It’s good to first add the water to the blender and on top of it all the rest.
  2. Blend the pumpkin puree with the maple syrup in a small bowl.
  3. Lay the base in a cupcake liners and add the pumpkin puree on top.

Delicious & Healthy Lentil Tomato Soup For A Cancer Diet

This soup will be wonderful only if you will use ripe tomatoes that taste great, as they make the difference between good soup and an amazing one! Always use organic ingredients when possible.

Try this Rye Bread Recipe to make a complete and delicious meal.

What you need:

2 large sweet potatoes, peeled and sliced 
3 small potatoes, peeled and sliced 
3 large ripe tomatoes, cut to cubes
Handful of chopped coriander 
1 small onion, peeled and chopped
1 cup red lentils
Filtered water to cover
2 spoons avocado oil

What to do:

  1. Use a wide pot to saute the onion in the avocado oil until golden.
  2. Add the rest of the ingredients and add water to cover.
  3. Bring to boil and then continue cooking on a low heat until the potatoes are soft (about 30 minutes).
  4. When ready, you may use a hand blender to mix the soup; it’s great to only mix half so you still have some chunks of veggies in each plate.

Easy To Make Strawberry Creamsicles For A Cancer Diet

Healthy Strawberry Creamsicle RecipeStrawberries and coconut cream, yum! They are easy and quick to make, and perfect for a hot day. These vegan creamsicles are delicious and healthy.  The strawberries are a great source of vitamin C and antioxidants, and the coconut cream has selenium, an antioxidant property that helps fight cancer, making these a healthy, creamy popsicle. We have included this healthy creamsicle recipe below.

Strawberry Creamsicle – Dairy & Sugar Free Ice Pop Recipe

Equipment

  • Blender or Food Processor
  • Ice Pop Molds

Ingredients

  • 3 cups organic berries
  • 1 can full fat coconut milk
  • 1/2 tablespoon vanilla extract
  • Stevia (9-15 drops) Sugar to Stevia Conversion or 3 tablespoons raw honey (see below for other sweetening options)

Directions

  1. Puree berries in a blender or food processor. Add 1 tablespoon of honey and blend until combined. Set aside.
  2. In a separate bowl mix coconut milk, vanilla extract and 9-15 Stevia drops together. Mix until combined thoroughly.
  3. Pour 1-2 tablespoons of strawberry puree into each ice pop mold. Pour 1-2 tablespoons of coconut mix into each mold. Continue to switch between the berry puree and the coconut mixture until ice pop molds are filled. Place molds in freezer.
  4. Allow ice pops to freeze completely before serving, about 5-8 hours. Once your ice pops are ready to serve, run the bottom of the ice pops molds under warm water to help release them from the molds. Serve and enjoy!

This recipe filled 12 large ice pop molds.

Other berries can be used in this recipe. Frozen berries would work if fresh berries aren’t available. Some suggested natural sugar substitutes include honey, date sugar and maple syrup. In a pinch, small cups and ice pop sticks or plastic spoons can be used to make your ice pops.
