St. Patty’s Day Vegan Irish Potato Soup Recipe


This St Patty’s Day try making this delicious diary free (Vegan) Irish Potato Soup for your plant-based cancer prevention lifestyle diet. Always use organic ingredients when possible.

Irish Potato Soup Recipe:

  • 4 potatoes, peeled and diced
  • 3 stalks of celery, sliced
  • 2 large carrots, sliced
  • 1 small onions, chopped
  • 1 1/2 cups alkaline water
  • 2 vegetable bullion cubes (or any vegan chicken bullion brand you like), dissolved in 1/2 cup boiling water
  • 3 cups unsweetened almond milk
  • 1/4 cup flour
  • 2 – 3 tablespoons of vegan butter

Combine the potatoes, celery, carrots, onion, water, and seasonings in a large pan. Bring to a boil. Cover and cook until tender, about 30 minutes. Combine a small amount of almond milk and flour until smooth. Add this mixture and the rest of milk to the potato mixture. Stir in the vegan butter. Cook and stir over medium heat until the soup thickens.
