Well I can only tell you how happy the family is; finally outside with our favorite “Summer Pasta.” We wanted to celebrate Bob’s Father’s Day with our summer special. The pasta was spelt and the mushrooms shiitake – all good stuff. What is the best part is that it is quick and easy. You can do it all in 30 minutes. Tomatoes, basil, garlic and shiitake mushrooms are all great foods for an anti-cancer diet. Studies support this, especially when prepared raw and organic. They are packed with powerful antioxidants. Plus it is so comforting.
Ingredients:
- 6 plum tomatoes sliced in smaller chunks
- bunch of fresh basil chopped
- 2 cloves of garlic
- 1 cup of shiitake mushrooms
- 1/4 cup of pine nuts or any favorite nut
- 1/4 cup of olive oil
- 1/2 tbsp. pink salt
- 1/4 tsp. red pepper flakes
Directions:
- Bring water to boil for pasta. We like spaghetti but any pasta is perfect. Tonight we tried spelt pasta and it was tasty.
- Saute’ garlic, mushrooms in olive oil, once brown add pine nuts to brown.
- In a separate bowl slice the tomatoes and basil. Then combine the remaining olive oil, basil, and seasoning. Add the garlic, mushrooms and pine nut last.
- When pasta is dente, add all ingredients together.
