Recently I heard about the grain Farro from my foodie friend Rochelle. Love trying new stuff and Farro is no exception. Then I found this recipe, which I of course modified, added too and scored. What an energy packed salad. I feel like I am almost addicted to it’s taste. It taste that good. Farro is loaded with the hearty nuttiness flavor of a healthful whole grain. Farro’s complex carbs break down slowly, thus keeping your energy level stable. The grain also has cyanogenic glucosides, a type of carb that may boost the immune system. Then add all the other healthy ingredients of tomatoes, cucumbers, onions, garlic and onions and it is a home run. You can have it for lunch or dinner; heck you could have it for breakfast. It is that good.

1 cup semipearled Farro (found at gourmet stores)
2 large heirloom tomatoes
1 small cucumber (I liked a little more) Love the crunch.
1 clove garlic, finely chopped
1/2 small red onion, cut into 1/2-inch pieces
3 tablespoons pine nuts
1 cup canned organic chickpeas, rinsed and drained
3 tablespoons organic extra-virgin olive oil
Juice from 1 organic lemon
3/4 cup chopped fresh parsley or 3 tablespoon of dried
1/2 small jalapeño chile, seeded and finely chopped or 1 tablespoon chili garlic sauce

Toast pine nuts in a frying pan. Dry oil on paper towel. Cook farro as directed on package; set aside. Halve tomatoes. Scoop out and discard inner meat and seeds or (feed it to your dog.) Then cut tomatoes into 1/4-inch pieces and place in a large bowl. Peel cucumber, halve lengthwise and slice out seedy center. Cut cucumber into ¼ inch pieces; then add to tomatoes. Add garlic and onion. Transfer toasted nuts to bowl. Add cooled farro, chickpeas, olive oil, lemon juice, parsley and jalapeño or chili garlic sauce; stir and combine. Season with pink salt and pepper. Stir ingredients again. Marinate at room temperature about 20 minutes before serving.
