Curry Chana Dal Lentils Recipe & Benefits of Lentils For Breast Cancer Prevention
After going to India a few times and being introduced to Dal it quickly becomes a favorite dish to serve on the side with a tasty salad. You can easily freeze it to serve at lunch, or serve it for dinner with some cooked brown rice. The combination is a complete protein and a meal that is satisfying.
Ingredients
1 cup of Chana Dal
3 cups of vegetable broth
2 large onions, chopped fine (2 cups) divided
1 large carrot chopped
salt for taste if broth is unsalted
1 tablespoon vegetable oil, prefer olive oil
1 clove, minced
2 teaspoons of curry powder
1 teaspoon of coarse black pepper
Instructions
- In a medium saucepan, combine lentils, broth, 1 cup of onions and salt. Bring to boil, reduce heat, cover the pan, and simmer for 40 minutes. I like my Dal a little dente.
- While the Dall is cooking, heat the oil in a frying pan or skillet, add the remaining items onions, garlic, carrots and saute’ until brown.
- Drain the lentils when finished.
- Combined everything together with the curry. Cover pan.
